Pumpkin Spice Cookies

It’s September! You know what that means- the season of pumpkin spice everything (literally everything). I’m definitely a fan of pumpkin spice lattes and my pumpkin spice candle, but the pumpkin spice M&Ms and pumpkin spice Oreos take things a step too far.

Here’s a recipe for an acceptable pumpkin spice-flavored snack: pumpkin spice cookies with cream cheese frosting. Continue reading

Zucchini Pie

Have an abundance of zucchini? Me, too. I ended up with two of these giant zucks, courtesy of my parents’ garden.

Using just ONE of these squashes resulted in muffins, pie, and enough leftover to freeze for more muffins later.

Zucchini is really versatile vegetable, and can be manipulated to taste less like a vegetable and more like fruit. This zucchini pie recipe is adapted from an apple pie square recipe my mom made when I was growing up. You’ll find lots of recipes out there if you Google “mock apple pie”. Recipe: Zucchini Muffins

Last summer, I talked a lot about living in town for school and having a small container garden on my back patio. Since then, I have graduated and moved to downtown St. Louis. I don’t even have an outside windowsill for a box of flowers, let alone a bigger space for a few pots of tomatoes and peppers.

Luckily, my parents have a huge garden- one luxury that comes with living on a farm. I’ve been making the 3-hour drive back home nearly every weekend since I’ve moved, so I’ve been benefitting from the garden, too. It’s incredible how much money one can save by growing a few vegetables rather than purchasing the produce from the store.

This week’s haul included green beans, cucumbers, sweet corn, and a giant zucchini. There are a ton of options for preparing zucchini, so prepare for lots of recipes to be shared as I eat my way through 8+ cups of it!

Tonight’s experiment was zucchini muffins. I used different ingredients I had on hand, like black raspberries, blueberries, and walnuts. Each recipe makes 10-12 muffins, depending on your definition of 2/3 full. Recipes are below, let me know what you think. :) Continue reading

#1 Fall Favorite: S’more Mix

With Halloween being in just a few short hours, I decided last minute to make a whole bunch of s’more mix and package it in cute Halloween bags I had leftover….you know, in the 1 in 5,000 chance I might have a trick-or-treater knock on the door to my college apartment. I’m guessing that my roommates and co-workers will be enjoying all of it on Friday.

College Diet: Black Bean Soup

One of my favorite leftovers is this black bean soup recipe. It’s a classic that my mom used to make and submitted in a variety of our church and school cookbooks. I’ll give you the “official” recipe, and then the college student version. :)

Pumpkin Rice Krispie Treats

Not only do I love agriculture, but I love to be in the kitchen. School has definitely been kicking my butt this semester, but I still find some time to relax and de-stress in the kitchen. I made these cute pumpkin rice krispie treats today for a club meeting. I saw pictures on Pinterest but couldn’t find a recipe, so I made my own. Enjoy! Continue reading
